Strawberry Rollups

A perfect treat for those of us still hanging onto our resolutions to eat healthier.
Ingredients
  • 3 cups of strawberries hulled and sliced (measure after you hull and slice)
  • ¼ cup of sweetener – You can use honey, sugar, Splenda, etc.
  • 1 tablespoon of lemon juice
  • Dash of cinnamon (optional)
Instructions
  1. Preheat your oven to 170 degrees. If you happen to have an oven that will go down to 150 I would use that. Many ovens, like mine won’t go that low. That’s fine.
  2. Just a note about sweetening – the ¼ cup I listed is pretty standard and although I wouldn’t use any more to sweeten you can certainly use less. Keep in mind that berries that are riper will be sweeter and that the sweetness will intensify as the rollups cook.
  3. Put all of the ingredients in a blender or food processor and blend until smooth.
  4. Grab a lined pan. I use silicone baking liners but you could also use parchment paper or even plastic wrap (it won’t melt in such low temperatures). Pour your strawberry mixture into the pan and spread it evenly.
  5. Now don’t worry about covering the entire pan with your mixture. You really want to make sure that you don’t spread it too thin. And don’t worry about the edges being straight either. You can cut uneven edges off later.
  6. Place the pan in the oven and cook for around 3 hours. This time will vary slightly from oven to oven. After the first hour, check on progress every half hour or so. When they are ready they will still be just slightly sticky but not wet. Remove from oven and let cool completely.
  7. When your rollups are cooking you may notice the edges getting crisp. If it’s just a little don’t worry about it, again you can cut them off. But if you want to save them, grab a basting brush and periodically brush them lightly with water.
  8. Once the rollups have cooled turn them upside down on a cutting board and gently peel off the baking mat or parchment paper. Using a pizza cutter or sharp knife cut into strips. Place a strip of wax or parchment paper (if you used parchment paper to line the pan you can reuse it) on your strip of fruit and roll it up.
