This year I’m determined to lose the rest of my “baby weight”. I’ll be honest with you, I think the baby weight was shed a long time ago (my son is 20 months now) but it just makes me feel better to refer to my extra pounds as baby weight. I love to bake delicious treats, try new healthy family recipes and indulge in old family favorites. I don’t believe in a restrictive diet but I am working on moderation and it’s already starting to pay off. I believe you can still enjoy delicious food while maintaining a healthy weight. My family has a history of heart problems and I want to set a good example for my son. It’s never too early to start teaching your little ones about healthy eating!
Over the last year, I’ve shared many delicious recipes with you and I’d like to take a moment to look back at some of the healthier options.
Do you have any trouble eating the recommended daily serving of vegetables? This Japanese Salad recipe is so delicious that you won’t even notice that most of the ingredients are vegetables. It does take a bit of time to prepare but I can guarantee you that it is well worth the effort.
For a sweet treat, this Fruit Tart Pie could be made into a healthier version by omitting the cream cheese & icing sugar base and replacing it with a thin layer of vanilla pudding. Any kind of fresh fruit tastes delicious in this pie so feel free to experiment with different fruit combinations. Instead of the orange juice glaze, you could use a little bit of melted jelly.
This Greek Pasta Salad is one of my husband’s favorites. It’s loaded with healthy vegetables like cucumber, green pepper, onion and you could even add in some cherry tomatoes. To make it into an even healthier meal, you could choose whole wheat pasta and choose a light Italian dressing.
